PHIL'S PARSNIP CHIPS

INGREDIENTS:
 
2 good-sized parsnips
1 Tablespoon olive oil
1 teaspoon ground coriander or other spice powder
Salt
Freshly ground black pepper

 
DIRECTIONS:
 
Pre-heat oven to 225°C.

Peel the parsnips, cut in half & thinly slice lengthways, or cut into chip-thickness lengths.
 
In a bowl, mix the oil & the spices, together with a generous helping of freshly ground black pepper & salt – about another teaspoon in total.
 
Toss the cut parsnips in the oil & spice mixture to coat well.

Line an oven tray with baking paper & spread the oil-coated parsnips in a single layer.

Bake in the oven until cooked, about 30 minutes, turning once or twice while cooking.
