BERT'S BANANA LOAF

INGREDIENTS:

4 tablespoons chia seeds

3/4 cup water

4 ripe bananas, mashed

1/2 cup coconut oil, melted

1/3 cup maple syrup

1/3 cup honey

1 teaspoon vanilla essence

zest of 2 lemons

juice of 1 lemon

1 1/2 cups almond meal

1/2 cup buckwheat flour

1/2 cup gluten free flour

1 tespoon baking powder

1 teaspoon baking soda

pumpkin seeds & cashew nuts to decorate

 

DIRECTIONS:

Preheat the oven to 170c fan bake.

Line a large loaf tin with baking paper.

Grind the chia seeds & add the water.

Stir to combine then set aside.

Place the bananas, coconut oil, maple syrup, honey & vanilla essence in a bowl.

Add the chia seed mixture, lemon zest & juice. Mix together.

Combine all dry ingredients then add to the wet ingredients & fold through.

Pour the mixture into the tin & sprinkle with pumpkin seeds.

Bake for 40 minutes then remove from oven & cool.
