DEBBIE'S BASIL PESTO

INGREDIENTS:
 
1 1/2 cups basil leaves (1 plant)
½ cup pine nuts, cashews or sunflower seeds
2 garlic cloves chopped
½ cup Olive Oil
60 grams Parmesan, finely grated
Salt & Pepper to taste
Lemon juice (optional)


DIRECTIONS:

Place basil, nuts or seeds & garlic in a food processor.
 
Process, scraping down sides occasionally until smooth.  (I use a stick blender)
 
With motor running, add oil in slow & steady stream.
 
Process til combined.
 
Add parmesan & finally lemon juice if used. (Keeps it green and last longer)
 
Season with salt & pepper.
 
Store in airtight container or covered bowl in fridge or can be frozen in ice cube container or small, sealed plastic containers.
 
Serve on crostini, crackers, with pasta or on thin pizza bases with blobs of cream cheese.
 
Delicious on a sandwich with cheese.
