JOAN'S BEETROOT TARTE TATIN WITH FETA CHEESE

SERVES 4 - 6

INGREDIENTS:

2 Large beetroot, scrubbed, trimmed, finely sliced into rounds

1/2 tsp ground cumin

1 tsp balsamic vinegar

1 tbsp olive oil

1 sheet ready-rolled puff pastry
 
50g feta cheese
 
DIRECTIONS:
 
Preheat oven to 200°C.
 
Layer beetroot slices in the base of a 23 cm pie plate.
 
Sprinkle over the cumin, vinegar & olive oil & roast the beetroot for 40 minutes.
 
The slices will shrink down, so don't worry if it first looks like they will not fit
Lay the pastry sheet over the top & press down gently.
 
Take a fork & prod a few holes in the pastry here & there, then bake for a further 25 minutes.
 
Place a serving plate on top of the pastry & carefully - using a towel so you don't burn yourself - flip the pie plate over to reveal the gleaming beetroot.
 
Crumble over a little feta cheese & slice into wedges.
