BRONWYN'S BEETROOT SOUP

INGREDIENTS:
4 small beetroot (450 grams) peeled & finely chopped
2 Onions peeled and finely chopped
1 Carrot, roughly chopped
1 Potato, roughly chopped
1 apple, roughly chopped
1 cup shredded cabbage, red or green
2 Tablespoons vinegar or lemon juice
2 Tablespoons brown sugar
¼ teaspoon ground cloves
3 cups water
DIRECTIONS:
Place all ingredients in a large pan, simmer for 30 minutes or until the vegetables are soft.
Puree, adding extra water if necessary to achieve desired consistency.
Serve garnished with yoghurt or sour cream & fresh parsley or chives.
