BRAISED CABBAGE WITH ORANGE & WALNUTS

INGREDIENTS:
2 oranges
1/4 cup liquid chicken stock
2 tsp wholegrain mustard
1 tbsp olive oil
2 garlic cloves, thinly sliced
800g red cabbage, cut into 8 wedges
1/4 cup walnuts, toasted, roughly chopped
1/2 cup fresh flat-leaf parsley leaves
DIRECTIONS:
Using a small sharp knife, remove peel and pith from oranges. Cut down either side of membrane to release segments. Place in a bowl. Squeeze membrane over a jug to catch juice (you’ll need 1/4 cup juice). Add stock and mustard to juice. Stir to combine.
Heat oil in a large, deep frying pan over medium-high heat. Add garlic. Cook for 30 seconds or until fragrant. Add cabbage. Cook, turning, for 3 minutes.
Add juice mixture to pan. Reduce heat to low. Simmer, covered, for 6 to 8 minutes or until cabbage is tender. Season with salt and pepper. Top with orange segments, walnuts and parsley. Serve.
