VIVIENNE'S CARAMEL APPLE PIE

INGREDIENTS:
6 medium Granny Smith apples
¼ cup Brown sugar
1 Tablespoon Butter
¼ teaspoon Cinnamon
¼ teaspoon Nutmeg
1 Tablespoon Water
2 Eggs
2 Tablespoons Milk
½ cup White sugar
1 cup Flour
2 teaspoons Baking powder
½ teaspoon Mixed spice
DIRECTIONS:
Heat oven to 175C.
Lightly grease a 3-litre ovenproof dish & sprinkle the base & sides with brown sugar.

Peel & quarter the apples, remove pips & all traces of the core. Slice apples & layer into the dish.
Dot over small pieces of the butter & sprinkle with cinnamon, nutmeg & water.
Separate eggs & beat the whites to a soft foam.
In a large bowl beat the two egg yolks with the milk, then beat in the white sugar.
Sift in the flour, baking powder & mixed spice.
Mix to combine, then fold in the beaten egg whites.
Spread this over the apples. (Mixture should be thick but if too thick to spread easily add a little more milk.)
Bake for 1 hour. (Check after 30 minutes, rotate dish &, if necessary, cover with foil to prevent topping overcooking before the apples are ready. The apples should be soft but still firm to the bite.)
