SHIRLEY'S COURGETTE PICKLE

INGREDIENTS:

1.4 kilograms of courgettes, thinly sliced

2 onions, thinly sliced

1/4 cup salt

3 cups white vinegar

3 cups white sugar

3 tablespoons wholegrain mustard

1 1/2 teaspoon curry powder

2 tablespoons cornflour mixed with a little white vinegar

INSTRUCTIONS:

Place the courgettes, onions & salt in a bowl & cover with water.

Soak for two hours.

In a pot mix vinegar, sugar, mustard & turmeric together & bring to the boil.

Strain the water off the courgette & onions & add them to the pot.

Return to the boil & simmer for 30 minutes.

Add curry powder & the cornflour/vinegar mixture.

Pour into sterilised jars.
