PATRICK'S POTATO & PARSLEY CROQUETTES
INGREDIENTS:
1/2 cup long grain rice
2 Large potatoes, cut into chunks
Salt & freshly ground black pepper
2 red onions, finely chopped
1 clove garlic, crushed
1/3 cup fresh parsley, chopped
1/2 cup sesame seeds
Sunflower oil for frying
INSTRUCTIONS:
Combine the rice with 3/4 cup of water in a saucepan
Bring to the boil, reduce heat to low, cover & cook for 15 minutes.
Remove pan from heat & spread on a plate.
Leave for 1 hour or until cooled completely, fluffing it up with a fork occasionally.
Meanwhile, put the potatoes into a large saucepan of boiling salted water & simmer for 15-20 minutes, until tender.
Drain, mash & combine the mashed potato with the cooled rice, seasoning, onions, garlic & parsley.
Mix thoroughly.
Shape the mixture into 8 croquettes with your hands, then roll in the sesame seeds.
Heat 1cm of oil in a large, heavy based frying pan & fry the croquettes for 2-3 minutes, turning constantly until crisp & browned all over.
