KEVIN'S KIWI "MOUSSAKA" WITH EGGPLANT

INGREDIENTS:
 
1 or 2 eggplants
 
750 grams lean beef mince
 
1 onion
 
1 head garlic
 
1 teaspoon cinnamon
 
1 teaspoon nutmeg
 
Salt and pepper to taste
 
1 red capsicum
 
1 yellow capsicum
 
2 courgettes
 
3 large mushrooms
 
Fresh tomatoes as needed
 
1 tin tomatoes
 
Bechamel sauce
 
Lasagne sheets
 
Grated cheese
 
 
DIRECTIONS:
 
 
 
Prepare the eggplant: slice thin & salt, leave to draw the juice out,
 
then wash & dry ready to be cooked in hot oil.
 
 
Brown the mince in large pot.
 
 
When this is brown add finely chopped onion, garlic & spices, then
 
add cut up capsicum, zuchini & mushrooms.
 
 
Stir in the cut up tomatoes & tin of tomatoes
 
 
Simmer 20min.
 
 
Prepare the baking dish & preheat oven at 180 degrees C.
 
 
Cook the eggplant in olive oil until light brown
 
 
Create the dish!
 
 
Place some olive oil in the dish, then layer with lasagne, then mince, t
then eggplant, then bechamel, then grated cheese, then repeat.
 
 
The top layer should be mince then bechamel & grated cheese.
 
 
Add a couple of eggplant pieces for decoration.
 

 

Place in the moderate hot oven, bake for 15 - 20 min, then let it

rest for 10 minutes before serving
