KATHY'S KUMARA SALAD
INGREDIENTS:
2-3 kumara, cut into bite sized pieces
1/2 teaspoon cumin seeds
1-2 tablespoons pumpkin seeds
1-2 tablespoons pine nuts
1/2-1 tablespoons sesame seeds
Oil
1 sliced onion
3 rashers of bacon, chopped
1/2 tin of mango, drained (optional)
DRESSING:
1/2 cup mayonaise
1 teaspoon garlic, crushed
1/2 -1 teaspoon curry powder
DIRECTIONS:
Preheat oven to 180c
Boil the kumara until soft.
Spread the kumara out into a roasting dish and sprinkle with the seeds & oil.
Roast for 5-10 minutes until slightly browned.
Fry the onion & bacon in a frying pan until the onion is soft.
Combine the kumara, seeds, onion, bacon & mango in a bowl.
Combine the dressing ingredients, then stir through the salad.
Can be served warm or cold.
