MARC'S MUNG BEAN NOODLE SALAD

INGREDIENTS:
 
3/4 cup mung beans
100 grams black rice noodles
1 red pepper, thinly sliced
2-3 radishes, thinly sliced
2 small carrots, cut into fine julienne or shredded
2 Spring onions, thinly sliced
A mix of your choice of microgreens
Salt & pepper to taste (optional)
 
Dressing:
3 Tablespoons lime juice
2 Tablespoons extra-virgin olive oil (optional)
1 Tablespoon fresh ginger, peeled & chopped
1 Tablespoon Soy Sauce
1 small teaspoon sugar or a few drops of Sweetener
1 teaspoon sesame oil (optional)
1 teaspoon Thai Chili paste
1 clove garlic, finely chopped
 
 

DIRECTIONS: 
 
Cook the rice noodles as per directions on package & drain well.
Set aside in a large bowl.

Add in all other ingredients & mix well.
 
To prepare the dressing simply whisk all of the dressing ingredients in a small bowl.
 
Pour the dressing over the salad, add salt & pepper to taste.

Mix well & then garnish with the microgreens of your choice - such as fresh coriander, Thai basil, sunflower Sprouts and pea Feathers.
 
Serve in a deep dish.
 
Note: If you cannot find black rice noodles, you may use spinach, mung bean, or Thai rice noodles instead.
