PAT'S PARSNIP & CARROT MASH

INGREDIENTS:
6 parsnips, peeled & sliced
6 carrots, peeled & sliced
Juice of one orange
Rind of 1/2 an orange
1 teaspoon grated ginger
2 cloves garlic, minced
Salt & pepper to taste
DIRECTIONS:
Place slices of parsnips & carrots into boiling water leave for 15 minutes or until soft
Remove from heat & strain water
While still hot, add orange juice, garlic & ginger & mash to desired texture
NB: You can place on a serving platter with a light sprinkle of cheese & grill in the oven for 5 minutes before serving for those cold winter nights
