NITA'S WARM CAVOLO NERO SALAD

INGREDIENTS:
1 onion, sliced
1 Garlic Clove, finely sliced
1 Red Chilli, finely sliced (optional)
Olive oil for frying
1 bunch of Cavolo Nero
Watercress
Lettuce
Juice of half a Lemon
Toasted or roasted Pumpkin seeds
DIRECTIONS:
Fry Onion, Garlic & Chilli with olive oil over a gentle heat until soft (dont let it brown).
Season with salt & pepper.
Add Cavolo Nero to the pan, toss for 30 seconds
Then add the lemon juice.
Serve on a bed of 1/2 watercress, 1/2 lettuce (mixed) with a generous sprinkle of roasted or toasted pumpkin seeds.
